A Little Soul Food


If you have found my blog via my article on the Proverbs 31 website, welcome! The rest of you know you are always welcome, too...

Getting the right start in the morning is such an important part of our day. Here is the opportunity to feed your brain, and give the kids fuel that will help them think clearly through the morning.

But what happens once that breakfast brain-food wears off? Our Maker designed us to require more fuel about every four hours, which makes lunch an important stop along the way.

All I want to know is, what do you eat for lunch each day?

I promise not to judge, even if your answer is "nothing" or "a candy bar." I'll be honest, sometimes those are my answers. But sometimes I want to get really creative, and I would love some new ideas.

  1. Woo hoo -- I get to go first! :) Lunch for me completely depends on the day, since I work a most varied schedule. If I'm at work, it often consists of a turkey, tomato, onion, avocado and cucumber sandwich, sometimes grilled. And occasionally some creamy tomato soup. At home, it can vary anywhere from last night's leftover pizza to stir-fried chicken & veggies, to ice cream. Too often, I go the easy route rather than putting thought into my meals. But new ideas are always good, too -- maybe I'll get some here!

  2. It's usually something quick and easy, like sandwiches, burritos or leftovers. Nothing fancy for the Skows. Congratulations on your article, by the way. Are you liking your new women's biblestudy? We are missing you at MOPS.

  3. First of all...I am so proud of you! I am so blessed for you. Others are going to finally see your creative, quality writing that we've read and loved for so long!!

    Lunch...I do a veggie sandwich on 12 grain bread. Tomato, sprouts, cucumber, onion, mozzarella and dijon mustard. Wondering what it would taste like grilled like Laura's? Fresh Fruit slices or fresh mixed fruit. Fiber fills me up! No need for the salty snack.

    I too have to be honest when I say the kind of day I'm having dictates the kind of lunch I'm having. On a good and "on track day" it's usually half of a turkey sandwich on wheat, a handful of veggie chips or soup, and fruit. On a more chaotic day(lately I seem to be having more of these) it may only be a granola bar or I realize it's 3:00pm and I have forgotten to eat lunch at all! I love your idea of planning the night before. Thank you for sharing your gift of writing with us. I Look forward to more.

  5. Hi. My husband typically comes home for lunch, and we try to eat together if he's here early enough. (We have two boys, 3 and 1.) Anything from grilled cheese & tomato soup (yesterday) to scrambled eggs & toast (today). Sometimes I eat tuna or chicken salad, and we even resort to pb&j. Quick and easy typically...And now with cooler weather, we'll probably do more leftovers for some hot meals!

    Lunch for me is usually some sandwiches w salat, ham, cheese and a cup of tea. But once a weak we go together and make a warm lunch with eggs, pita or something else. Mmm!
