But once a weak we go together and make a warm lunch with eggs, pita or something else. Anything from grilled cheese & tomato soup (yesterday) to scrambled eggs & toast (today). Sometimes I eat tuna or chicken salad, and we even resort to pb&j. I too have to be honest when ...Good Morning Krista,<br />I too have to be honest when I say the kind of day I'm having dictates the kind of lunch I'm having. On a good and "on track day" it's usually half of a turkey sandwich on wheat, a handful of veggie chips or soup, and fruit. On a more chaotic day(lately I seem to be having more of these) it may only be a granola bar or I realize it's 3:00pm and I have forgotten to eat lunch at all! I love your idea of planning the night before. Thank you for sharing your gift of writing with us. If I'm at work, it often consists of a turkey, tomato, onion, avocado and cucumber sandwich, sometimes grilled. And occasionally some creamy tomato soup. At home, it can vary anywhere from last night's leftover pizza to stir-fried chicken & veggies, to ice cream. Too often, I go the easy route rather than putting thought into my meals.
